Why Cupcakes?
I have always been a cupcake fan. What’s not to love? A hand held piece of yummy. Cupcakes are the perfect blend of cake and frosting. Not too much of either. You get a taste of both with each bite. I like easy, simple and wonderful tasting cupcakes. I know many will argue that it can’t be homemade if the cake isn’t made from scratch. I know some will disagree with me but I choose to use boxed cake mixes. Not only are cake mixes versatile, they are economical. I think that filling distracts from the simplicity of the cupcake. There are several recipes that do have fillings, such as the Chocolate Chip Cookie Dough, but they are part of the charm of those cupcakes. Growing up, my mom never used store bought frosting so I’ve learned to love frosting made from scratch. In a busy world, where all of our time is limited, I would rather put my time into homemade frostings and decorative garnishes.
