La Cuisine Creole: A Collection of Culinary Recipes from Leading Chefs is a Vintage Creole Cookbook By Lafcadio Hearn. First published in 1885 this is a collection of recipes by chefs and housewives who have made Louisiana famous for its cuisine.

Step back in time and as one reviewer put it "This is really a fun book to own as a Louisiana resident of Cajun descent. Reading the recipes puts me in mind of having a conversation with my grandmother about "how to make . . ." a certain dish for which she never measured any of the ingredients but always got it just right; i.e. "a little (of this)",

A Collection of Culinary Recipes From Leading Chefs and Noted Creole Housewives, Who Have Made New Orleans Famous for Its Cuisine included ""hundreds of Creole recipes that had never before been published,"" according to historian Andy Smith. Among them, in the spellings of the day, are ""Gombo filee, Bouille-abaisse, Jambolaya and Bisque of Crayfish à la Créole."" There are nine recipes for ""gombo"" alone. S. Frederick Starr, author of Inventing New Orleans: Writings of Lafcadio Hearn, says, ""It's on the shortlist of classic American cookbooks."
