About the Author
Siddhartha Thakur is a Professor in the College of Veterinary Medicine at North Carolina State University (NCUS). He is the Associate Director at the Comparative Medicine Institute and leads the Emerging and infectious Diseases research program there Dr. Thakur earned his Ph.D. in Population Medicine at the College of Veterinary Medicine, NCUS. Prior to joining the faculty at NCSU, he was an Oak Ridge Research Fellow at the FDA's Center for Veterinary Medicine. Dr. Thakur champions a One Health approach to study the development of antimicrobial resistance affecting animal and human health.
Kalmia E. Kniel is a Professor of Microbial Food Safety in the Department of Animal and Food Sciences at the University of Delaware. She received her Ph.D. from Virginia Tech in Food Science and Technology with a focus on Food Microbiology. Prior to joining the faculty at the University of Delaware, Dr. Kniel was a postdoctoral microbiologist at the USDA Agricultural Research Service's Animal Parasitic Diseases Laboratory. Dr. Kniel's research interests are focused on the mechanisms behind the survival and inactivation of enteric viruses, protozoa, and bacteria prevalent in our water and foods. Dr. Kniel is especially active in education and is an advocate for teaching food safety at all levels.
