Recipe

Mommy's Pastrami on Focaccia
Submitted by: Regina Vining from Warwick, RI

1 loaf focaccia bread, halved lengthwise
¼ c. basil pesto
½ lb. deli pastrami, sliced
¼ lb. deli ham, sliced
5 slices Provolone cheese
1/3 c. onion, thinly sliced
1 tomato, sliced
¼ t. Italian seasoning

Spread cut sides of loaf with pesto. On bottom of loaf, layer meats, cheese, onion and tomato; sprinkle with seasoning. Add top of loaf. Wrap in aluminum foil; place on a baking sheet. Bake at 350 degrees for about 20 minutes, or until heated through. Let stand several minutes; cut into wedges. Makes 8 servings.
