    INTRODUCTION


    Hi! My name is Dr. Kate Biberdorf, but most people call me Kate the Chemist. You can usually find me teaching classes in Austin, Texas, or setting off explosions on national TV. Last year, I published my first nonfiction book (The Big Book of Experiments), which contained 25 at-home experiments, including one of my favorites, Edible Snot. People loved that demo so much that my inbox exploded with requests for more experiments that can be done in the kitchen—so I set off on a flour-filled adventure to create 25 new EDIBLE science experiments.

    From Unicorn Sugar Cookies to Dragon Cupcakes, every protocol is packed full of chemistry. Do you know what chemistry is, besides being the best science in the entire world? It’s the study of energy and matter, and their interactions with each other. Like how the proteins in our flour react with the sugars in our dough to give us a brown pretzel, or how salt can lower the temperature of a milk mixture to give us ice cream (two things I show you how to do in this book)!

    Each experiment can be done with materials that your parents or guardians probably already have in their pantry (like sugar, baking soda, and food coloring). But the best part is, unlike my last book, you can actually eat every single one of these final products!
