Sam Irwin trained as a historian at the University of Louisiana at Lafayette, where he became the state's foremost (and possibly only) crawfish historian when he published Louisiana Crawfish: A Succulent History of the Cajun Crustacean. His varied life experiences compelled Irwin, an Americanized Cajun, to write It Happens in Louisiana: Peculiar Tales, Traditions & Recipes from the Bayou.
