About the Author

When my daughter Emily was five years old, she was diagnosed with an autoimmune disease called Pars Planitis, which is an inflammatory eye disease that can lead to blindness. After several visits to the Mayo Clinic in Minnesota, she had a steroid injection in her eyes, since the inflammation was starting to affect her vision.

Four years later, I came across a book titled The Gluten Connection by Dr. Shari Lieberman. I read about autoimmune diseases and how gluten can trigger them. I took a chance and had Emily tests for gluten; the test came out positive. We went gluten-free immediately and never looked back.

Before we went gluten-free, my daughter's vision was 20/100. After being gluten-free for three weeks she said she could finally read out of her left eye! Three months later her vision was 20/40. Six months later her vision stabilized around 20/20, where it has remained to this day. WE DID IT!

I am so grateful for the information in that book; it changed our lives completely and in so many wonderful ways. We each have a story to tell and I hope yours has a happy ending as well.

I hope you enjoy this gluten-free kids cookbook I have put together especially with YOU in mind!

I hope you have fun and most of all, I hope it makes you smile.

Happy to be gluten-free-

Stephanie Ouellette
